I was in the mood for something delicious and perfect for the season. I was walking around my local grocery store and realized that I wanted to bake something with pumpkin. It's hard to eat healthy and yet still crave for some sweet-sugary goodness. So I will share my delicious recipe with you.
Healthy Pumpkin Bread.
1 cup whole wheat flour
¼ teaspoon celtic sea salt
½ teaspoon baking soda
1 tablespoon cinnamon
1 teaspoon nutmeg
½ teaspoon cloves
½ cup roasted pumpkin
3 tablespoons honey
¼ teaspoon stevia
3 eggs
In a food processor combine the whole wheat flour, salt, baking soda and spices. Add pumpkin, honey, stevia and eggs and pulse for 2 minutes. Scoop the batter into a loaf pan and bake at 350° for 35-45 minutes.
If you want to add some walnuts to your recipe like I did, it's makes it just that little cherry on top.
